Protein “Muffins”

Going on a trip next week and I am starting my food planning.  Going to make these tomorrow to take with me on the airplane 🙂  I love these because you can use different flavor proteins or extracts to come up with some great different flavor muffins!!
 
3 Cups Oatmeal
2 Scoops of protein (any flavor…i love to use banana)
1 Cup Splenda sugar substitute
1-1/2 Cups of water
2 Eggbeaters (Use the equivalent of two eggs)
1 tsp vanilla or any other extract
2 tsp. Cinnamon
1 tsp. Salt
2 tsp. Baking Powder

Mix water, protein, eggbeaters and cinnamon. Mix oatmeal, Splenda,
salt and baking powder. Then mix all ingredients use a muffin pan coated
in non-stick spray bake at 350 degrees for 20 minutes. (They are better
warm but still do well in the refrigerator.  I am going to freeze mine until my plane ride)
