This is one of my favorites!   Great for keeping hunger away between meals!  Feels indulgent!!

1 tsp instant coffee ( I use decaf)

stevia powder (to taste…I like mine sweet)

1/2 tsp vanilla extract (this is optional)

dash of xanthan gum or guar gum (helps to thicken it)

about 1 cup water

Put everything in a blender…start to blend. Add ice until desired consistency.    Sometimes I will drizzle some Walden Farms Chocolate or Maple  syrup on top.

It is also good to do with crystal light if you are looking for something fruity!! 🙂

I make this exact same thing with Coffee Flavor Concentrate, Stevia, Water & ice Cubes… but I am curious about the Guar Gum… INTERESTING! 🙂

Davinci sugar free syrups are great to add too! The Guar Gum thickens it up nicely…almost giving it a shake texture. Delish!

Never thought to add PB to coffee…good idea! Cocoa powder on it is awesome (I will add that) as well as some flax seeds. The possibilities are endless!!
