Spiced Cake with Frosting

This is great for high carb days!!
2 1/2 c. Oatmeal
8 egg whites or 4 large eggs
1 12 oz can 100% Pumpkin (or 12 oz cooked sweet potato…mashed)
1 tsp. Vanilla Extract
1 tsp. Baking Powder
1 tsp. Baking Soda
2 tsp. Cinnamon
1/2 c. Sugar-Free Vanilla Davinci (www.davincigourmet.com)
12 drops Stevia liquid (optional — this makes it sweeter)

With electric beaters, beat pumpkin, eggs, SF syrup, & vanilla. Add dry ingredients and mix well. Pour into Pam sprayed 13 X 9 glass pan and bake for 30 minutes.

Cottage Cheese Frosting: (optional)
1 c. low or no fat  Cottage Cheese  (rinse well and drain)
2 scoops Vanilla whey
2-4 pkts. Splenda
Couple Shakes of Cinnamon
Couple Shakes of Butter Buds

Blend in food processor until smooth and frost your cooled cake
