Chocolate Zucchini Cake

1/4 cut oat flour (ground oats)

1/2 scoop protein powder

1/2 tsp baking powser

sweetner to taste

2 Tbls unsweetened cocoa powder

1 small/med grated zucchini

2 eggs or 4 egg whites

2 tsp sugar free chocolate jello pudding powder (optional)

1 TBS carob chips (optional)

Mix all ingredients. If too dry add a little bit of water at a time. Cook like pancakes 🙂

(if you double the recipe, these can be made like muffins)

    Sounds really good. How did they turn out? What could I sub for the pudding? I’m sure it makes the recipe but just curious. 🙂

      Hi! The pudding makes them thicker, so you could omit it. I usually do. Never tried to sub for it, but you could try Xanthan Gum or Guar Gum as a thickener. (only use a little bit 1/8-1/4 tsp at most…too much makes stuff gummy and have a weird taste). You have some fantastic recipes! I will be doing more browsing when I get a chance!!!
