3 tbsp almond meal — flour
2 egg — separated
2 tbsp splenda — to taste
1 tbsp cocoa powder
1/2 tsp ground cinnamon
6 drops vanilla extract — (6 to 8)

Foam egg yolks with splenda dissolved in a few drops of water.
Beat egg whites until stiff.
Add almond flour, cocoa, and cinnamon to yolks, stir smooth.
Fold in egg whites.
Drop from teaspoon on  cookie sheet sprayed with Pam; flatten out, and bake in a moderate oven 350°Fdegrees F. 10-10-15 mins
