SZECHUAN CHICKEN

4 boneless skinless chicken breasts
2 tbsp soy flour
drizzle of olive oil
3 cl garlic — minced
1/3 cup soy sauce — (low salt)
1 1/2 tbsp white wine vinegar
1 tsp splenda
1/4 cup water
3 lg green onions — coarsely chopped
1 dash cayenne

Cut chicken into  cubes. Lightly toss with flour in bag to coat. Heat oil in skillet or wok; stir-fry chicken and garlic until lightly browned. Add soy sauce, vinegar, splenda and water. Cover and cook 3 minutes or until chicken is cooked through. Add green onions and cayenne; cook uncovered about 2 minutes longer.

Serve over shiritaki noodles…or rice…or tons of veggies (my fav option 😀 )

    I make something similar but with red miso paste and ginger! soo yummy! But I serve is with quinoa! gotta have my carbs!
