Ginger Pumpkin Crepe

For Crepe:
6 egg whites
2 Tbl Oats

1 tsp ground ginger

For Pumpkin Filling: (use as much as you want)
canned pumpkin

sweetener to taste

nutmeg ”

cinnamon ”

chopped almonds (or other nut of your choice)

Put crepe ingredients in a blender and blend for 30 (high)

Heat skillet sprayed with non stick spray until it is very hot.  Pour batter into pan and spread it around in a circle

When it starts to bubble flip it over, and it will be done in a few seconds.

 Mix filling ingredients and spread on crepe.  Roll up and eat!
