Zucchini Pasta

Zucchini

Olive oil spray

 salt and  pepper

chopped tomatoes

Garlic powder

Basil

Grated Parmesan (opt)

 Using a vegetable peeler, cut the zucchini into lengthwise ribbons.  Continue to slice into ribbons.

Cook the zucchini strips in  a skillet generously sprayed with Olive Oil pam (or a tsp or two of olive oil).  Cook 2-3 min until soft.  Add some salt, pepper, garlic and basil to taste.  Add some chopped tomatoes, and grated Parmesan if desired.

I think I am also going to try this with some lemon and garlic next time 🙂
