Ginger Cinnamon Pancakes

40 g oat flour

2 eggs

4 egg whites

4-6 packets splenda

dash of vanilla extract

cinnamon and ginger ( I like a lot but use as much/little as you like)

pinch of baking powder

Mix dry ingredients.  Beat in eggs and extract.  Pour into heated pan sprayed with Pam.  Cook on one side and flip. These will puff up in the pan but will deflate a bit when taken off the heat.  Sprinkle with more cinnamon if desired and top with syrup (I used Walden Farms).
