Stuffed Chicken Breast

1 5-6 oz chicken breast (cooks to about 4 oz)

1 1/2 cups fresh spinach
 1 Tbsp of minced garlic ( i like mine with a lot of garlic 😀 )
20 ounces chopped Almonds (or nuts of your choice)
Salt
black pepper
Pre-heat oven to 350 degrees.
Pound chicken until thin. Season well with salt and pepper. Sprinkle  with chopped almonds and garlic. Put spinach on top.
Roll up and place on pan. Cook for approx 50-60 min until don.
 
 Let rest for 15 minutes before slicing (makes it easier to slice)
