Blueberry Protein Cookies

Combine all ingredients until blended well.

Mix in blueberries and drop by the spoonful onto a greased cookie sheet

Bake at 375 degrees for 10-15 min

    This looks really awesome, but I’m confused by the protein powder line. It mentions 2 T, then it says 2 scoops in brackets…. πŸ™‚

    just out of curiosity, what do the guar gum/xantham gums do for the recipe? bulk it up?

      Sorry I am just getting to this. The “gums” help to add some thickness and help keep them together a bit better.

    yumm made these! just tweaked them a bit, also added 1/4cup ground flax and 1/4tsp baking powder. they raised nicely and to flax give them a little more density
