Quick Chicken Fried Rice

I like to cook up chicken in bulk so I can make quick recipes…this is one of those recipes where some pre-cooked chicken and rice make for a simple, quick meal.

3 oz cooked chicken breast cut into small pieces (can use any protein here)

1/2 cup cooked brown rice

1/4 cup frozen peas (you can also use a peas/carrots mix)

1 egg (beaten…can use 2 egg whites instead)

small amount of water (or broth)

garlic, minced onion, ginger to taste

low sodium soy sauce ( I used Bragg Aminos)

Throw all the ingredients in a pan, stirring every couple of minutes until heated through.
