With the 4th Of July coming up, I got to thinking about all the foods I loved to eat as a kid at cookouts.  Watergate Salad was one of my favorites.  The original was made with cool whip, pistachio pudding, pineapples, walnuts and marshmallow, which I left out 😉  This version brought back some memories, and I thought it was even better than the real thing 🙂

1 cup 1% low-fat cottage cheese

1⁄2 cup pineapple (crushed or cut…not slices)

1 Tbsp sugar free fat free pistachio pudding mix

Sweetener to taste ( I used 4 splenda packets)

1-2 TBLS chopped walnuts

Mix together the pudding mix, cottage cheese, sweetener and a small amount of water (approx 1/2 cup) until creamy. Mix in pineapple and nuts.

    ohmygoodness, this is too weird! i had a weird craving for pistachio pudding today & i bought some at the store. well, it turns out it doesn’t set up when you use almond milk! so i had pistachio soup! 😦
    i so wish i had read this post before i wasted that box of pudding mix!

      That is weird!!! Total coincidence huh? I love pistachio anything!
      I guess you will have to go shopping again 😉
