Oat Muffins

These were good, I think I am going to make some variations on them.  Blueberry, chocolate chip, lemon poppyseed, apple cinnamon, etc are a few that come to mind 🙂


1/2 c splenda for baking
2 c. oat flour (ground oats)
3 t. baking powder
1 t. salt
1/2 t. Baking soda
1 egg
1 c of Almond milk (approx)
4 T melted butter

Preheat oven to 375 degrees

Grease 12-muffin pan or use liners

In a large bowl, stir together sugar, oat flour, baking powder, salt and baking soda.

In a small bowl, beat egg for 1 minute.

Add 1/2 c. almond milk to egg and mix.  Then add the melted butter.

Add the Almond milk/egg mixture to dry ingredients and stir until roughly blended.  Add more almond milk a little at a time until the consistency of “cake batter”

Spoon into greased muffin cups and bake for 15 to 18 minutes.
